Winter Break has officially begun!... sort of. I still have to go to work, but none the less finals are over and it's smooth sailing until January! Here are some beautiful pictures I found that are rather "wintery." Can't wait to see and do some of this stuff!
The decorating has been completed! After two hours out in the cold with three other family members we finished and here it is! We think it looks something like a gingerbread house ;D
Can you believe it? Christmas is just around the corner! I have finally found some time to throw up a few decorations here and there in between homework and school. It definitely is beginning to look a lot like Christmas. If only it would snow!
This is our beautiful tree that we bought today and lovingly decorated! I love it to death!
1 (10 ounce) package frozen chopped spinach, thawed and drained
1/2 cup crumbled feta cheese
2 cloves garlic, chopped
4 skinless, boneless chicken breasts
4 slices bacon
Directions
Preheat oven to 375 degrees F (190 degrees C).
In a medium bowl, mix mayonnaise, spinach, feta cheese, and garlic until well blended. Set aside.
Carefully butterfly chicken breasts, making sure not
to cut all the way through. Spoon spinach mixture into chicken breasts.
Wrap each with a piece of bacon, and secure with a toothpick. Place in
shallow baking dish. Cover.
Bake in the preheated oven for 1 hour, or until
chicken is no longer pink in the center and the juices run clear. An
instant-read thermometer inserted into the center should read at least
165 degrees F (74 degrees C).
Happy Thanksgiving! Hope you all had a great time of being thankful to the Lord for all the grace He has poured out on us. We had a really great time with our family this year. We made tons of delicious food. Mommy baked some delicious turkey, Roman made Zupa and fried asparagus (super yummy!), my sister made creamy mashed potatoes, and I contributed some spinach and cheese stuffed chicken breasts. It was all very filling and very tasty! I'll post the recipes for anyone who's interested!
There is nothing like staying at home on a Friday (because there is no school, of course!) and catching up on a ton of homework with delicious hot apple cider :D Gonna kick this 14 page paper's butt!!!
